Food For Thought



Ingredients:
Red Onion Memorial Meatloaf
1/2 cup of diced red onions
1/2 cup of diced yellow onions
3 tbs on Italian seasoning
4 tbs on parsley flakes
1 10oz can of Hot Rotel mix
4oz can of tomato sauce
2 lbs of ground beef
3/4 lbs of Minute Rice
16oz of chopped broccoli
Steamy Cheesy Broccoli Sauce
1 lb of broccoli
1/3 cup of cubed Velvetta Cheese
Caramel Peanut butter brownies
1 16oz basic brownie mix
2 tbs of Pam Cooking spray
1 large egg
2 cups of softened peanut butter
1/3 cup of sugar
Caramel Peanut butter icing
1/3 cup of soften peanut butter
3 tbs of sugar
4 tbs of water
Directions:
Preheat oven to 300
Mix ground beef, diced red and yellow onions, drained Hot Rotel mix, Italian seasoning, parsley flakes and tomato sauce.
Mold in cooking dish and bake for 55-65 mins.
*Steam 1 lb of broccoli in a 1/2 cup of water for 25 min. and drain. 
Place into heat-safe dish, spread 1/3 cup of cheese over broccoli and cover with air-tight lid.
*Follow on-box directions for Minute Rice preparation.
*Follow on-packet directions for brownie mix, in last step, mix in 2 cups of softened peanut butter and 1/3 cup of sugar.
Oil 9 in. sq. pan with Pam Cooking Spray and pour mixture evenly.
Bake for 25 mins.
*In small sauce pan, bring to a boil 4 tbs of water and slowly add 3 tbs of sugar.
Stir until thickened, then mix with 1/3 cup of peanut butter.
Allow icing to cool before it's spread on brownies.
Serving: 10 (with 2 brownies each)





Cheesy Italian Meatloaf, slow-steamed broccoli with shells and cheese!

Ingredients: 
Cheesy Italian Meatloaf
2 lbs of ground beef
3 tbs of Italian Seasoning
1/2 cup parsley flakes
1 10oz can of Hot Rotel
4oz can of tomato sauce
cup of cubed Velvetta Cheese
Steamy Cheesy Broccoli
1 lb of broccoli
1/3 cup of cubed Velvetta Cheese
*1 box of Velvetta Shell and Cheese dinner
Directions:
Preheat oven at 350
Mix ground beef, Italian seasoning, parsley flakes, drained hot Rotel mix and tomato sauce together.
(Meat will be placed in baking dish in two layers.)
Mold mixture layer in baking dish, cover in a layer of cubed cheese, then add last layer.
Place in oven from 50-60 min. or when cheese has completely dissolved into beef. 
Steam 1 lb of broccoli in a 1/2 cup of water for 25 min. and drain. 
Place into heat-safe dish, spread 1/3 cup of cheese over broccoli and cover with air-tight lid.
Follow on-box directions for Velvetta Shells and Cheese Dinner.
Serving: 8






Spicy Rotel (in under an hour)
Ingredients:
2 lbs of ground beef or ground chuck
2 tbsp of Italian seasoning
3 tbsp of parsley flakes
1 1/2 tbsp of season salt
1/2 tbsp of garlic salt
1 10oz can of Hot Rotel mix
1 10oz can of Mild Rotel mix
1 1/2 of cups of cubed Velvetta cheese

Directions:
Combine seasonings with ground beef or chuck.
Cook until brown, no oil needed.
Remove from heat and drain oils.
Drain liquid from Mild Rotel mix.
Lightly drain liguid from Hot Rotel mix.
Then add both to ground beef or chuck mix.
Return to heat and slowly add cheese cubes.
Cook until cheese melt and remove from heat.
Serve with warm garlic bread.

Guess Who's Engaged!

I know my personality better than most but when I was asked the big question... well I turned into that little girl that had so many big dreams about how her wedding would be. Darius and I have been together for a while. We have had more than our share of ups and downs, needless to say the majority have been because of me or a particular way I have behaved in the past. I promised myself that if I ever got involved again, that I would play it cool. I have to admit, in the past, I was all too eager to think the worst. Now that I look back, I realize that maybe I had it all backwards. Perhaps my intuition was in overdrive. Every woman should be in tune with her mind, body and soul.
